Position Summary

As a member of the professional staff, contributes a high level of specialized knowledge and skill in a discipline (e.g. Accounting, Finance, Human Resources, Information Resources, Operations Planning & Support, Sales & Marketing) area to support department and/or function objectives. Generally, works with considerable independence, developing operating plans and related operational processes for own department in alignment with broader business objectives.

The Associate Director F&B Services (Director) manages assigned tactical support efforts as well as specific projects in support of all brand food and beverage sales and service experiences. This role will report to the VP Resort Operations & Experience and work directly with resort leadership in tactically executing the food and beverage service strategy within site restaurants, pool bar grills, and marketplaces. In addition, this position is the lead for future F&B concept research and development including sourcing, positioning and implementation of the F&B Services strategies for the brand globally.

Expected Contributions

Position works with the General Managers and Food and Beverage Leaders at the sites to provide tactical support of department initiatives as well as lead division-wide projects in support of key front of the house initiatives.  Position will seek to define project scope, timeline, deliverables and implementation plans based on the F&B Services strategies. The position is responsible for the day-to-day support, management & execution of F&B Services strategies.   

Primary Responsibilities:

  • Develops and ensures implementation of standard operational procedures to achieve the desired experience for owners and guests.
  • Responsible for future F&B concept research to include sourcing positioning and deployment.
  • Champion’s creation, implementation and fulfillment of all food and beverage service training programs.
  • Lead the development of brand beverage standards including purveyor sourcing, supplier agreements and product distribution.
  • Trains site leadership and staff on all food and beverage service-related processes.
  • Supports quality team in updating brand standard food and beverage service policies.
  • Supports the required state and federal guidelines for food, beverage and license related standards and requirements. Also keeps senior stakeholders updated on relevant legislative and process changes.
  • Assists in supporting the opening of new resorts from a food and beverage sales and service standpoint.

Project Management

  • Creates and executes project plans and revises as appropriate to meet changing needs and requirements.
  • Defines project scope and determines deliverables in partnership with stakeholders.
  • Identifies and requests resources needed.
  • Conducts data analysis and/or needs assessment.
  • Manages day-to-day operational details of the project. 
  • Prepares project reports and presentations to stakeholders and other interested parties.
  • Holds regular formal and informal meetings with stakeholders and effectively communicates relevant project information to them.
  • Delivers informative & well-organized presentations as needed.
  • Identifies opportunities for improvement and makes constructive suggestions for change.
  • Sets and manages stakeholder expectations.
  • Seeks and participates in development opportunities above and beyond training required.
  • Trains others through both formal and informal training programs.
  • Recommends areas for improvement in internal processes along with possible solutions.
  • Complies and assists to enforce standard policies and procedures.

Planning and Development

The Director gathers and analyzes information from various sources (stakeholders, surveys and/or internal & external data) relative to brand F&B Strategy and presents deliverables and implementation plans to the VP Resort Operations & Experience and/or project stakeholder. 

Execution

This position will work both independently managing day to day tactical support and project elements (research, analysis, drafting recommendations, timelines and implementation plans) as well as in cooperation with stakeholders, corporate and site leaders and other business partners who provide input and/or who will be impacted by the outcome.  

Outcomes / Implementation  

At the direction of the VP Resort Operations & Experience, the Director implements new or revised practices or programs as an F&B brand strategy outcome, based on project research and analysis.  Implementation includes preparation of communications, reports, presentations and training aids, as needed.  Development of on-going reporting to monitor the effectiveness of the new practice or program is also a longer-term project outcome.

Candidate Profile

Education

  • Four-year degree in Hotel and Restaurant Management (or a related field) or equivalent work experience. 

Experience

  • 7 - 9 years management experience in food and beverage sales and service.  Multi-site level experience preferred. Strong knowledge of front and back of house food and beverage processes preferred.
  • Experience in managing medium to large - sized multi projects from initial concept to implementation within F&B Strategies.

Skills/Attributes

  • Proficiency with Microsoft Outlook, Excel, Word and PowerPoint and vendor interfaces; able to learn MVCI systems related to projects supported.
  • Must be a self-starter, well organized, and possess a strong attention to detail.
  • Excellent organizational and time management skills in order to manage multiple projects.
  • Professional demeanor and appearance; strong communications and interpersonal skills.
  • Goal oriented, self-motivated.
  • Able to maintain a team environment and interact well with all levels of the organization.
  • Ability to travel 70% of the time.
  • Strong command of analytics, POS sales reporting and translation to the profit and loss statements.
  • Understands how to communicate difficult/sensitive information tactfully.
  • Is proactive in becoming educated to fully understand the systems, policies and/or processes related to the various project assignments.
  • Has a thorough understanding of resort operations and the vacation ownership business.
  • Maintains awareness of internal & external information and emerging practices that are germane to F&B strategies.
