Prepares ingredients for cooking, including portioning, chopping, and storing food. Washes and peels fresh fruits and vegetables. Weighs, measures, and mixes ingredients. Prepares and cooks food according to recipes, quality standards, presentation standards, and food preparation checklists. Operates ovens, stoves, grills, microwaves, and fryers. Tests foods to determine if they have been cooked sufficiently. Monitors food quality while preparing food. Sets-up and breaks down work station. Serves food in proper portions onto proper receptacles. Washes and disinfects kitchen area, tables, tools, knives, and equipment. Checks and ensures the correctness of the temperatures of equipment and food.  

Reports accidents, injuries, and unsafe work conditions to manager; and completes safety training and certifications. Follows all company policies and procedures, ensures uniform and personal appearance are clean and professional, maintains confidentiality of proprietary information, and protects company assets. Welcomes and acknowledges all guests according to company standards, anticipates and address guests’ service needs.  Communicates with others using clear and professional language, prepares and reviews written documents accurately and completely, and answers telephones using appropriate etiquette. Develops and maintains positive working relationships with others, supports team to reach common goals, and listens and responds appropriately to the concerns of others. Complies with quality assurance expectations and standards. Stands, sits, or walks for extended periods or for an entire work shift. Moves, lifts, carries, pushes, pulls, and places objects weighing less than or equal to 25 pounds without assistance. Performs other reasonable job duties as requested by Supervisors. 


Safety and Security 

• Follows company and department safety and security policies and procedures to ensure a clean, safe, and secure environment. 

• Reports work related accidents, or other injuries immediately upon occurrence to manager/supervisor. 

• Follows policies and procedures for the safe operation and storage of tools, equipment, and machines.  

• Uses proper equipment, wears appropriate personal protective clothing, and utilizes correct lifting procedures, as necessary, to avoid injury. 

• Completes appropriate safety training and certifications to perform work tasks. 

• Identifies and corrects unsafe work procedures or conditions and/or reports them to management and security/safety personnel. 

• Follows property specific procedures for handling emergency situations (e.g., evacuations, medical emergencies, natural disasters).

Physical Tasks 

• Stands, sits, or walks for an extended period or for an entire work shift. 

• Reaches overhead and below the knees, including bending, twisting, pulling, and stooping. 

• Moves, lifts, carries, pushes, pulls, and places objects weighing less than or equal to 25 pounds without assistance. 

General Kitchen 

• Prepares all potentially hazardous foods at the correct temperature according to the HACCP guidelines. 

• Follows appropriate personal hygiene procedures to ensure food served to guests is safe for consumption, including disinfecting hands prior to handling food and wearing a hat/hairnet and proper footwear. 

• Follows and ensures compliance with food safety and handling policies and procedures, such as product rotation, First In-First Out (FIFO); dating, labeling, cleaning, and organizing coolers/freezers/storage areas; and Cold Chain compliance, across all food-related departments and areas. 

• Ensures the quality of food items and notifies manager if a product does not meet specifications. 

• Communicates any assistance needed during busy periods to the shift supervisor to ensure optimum service to guests. 

• Operates ovens, stoves, grills, microwaves, and fryers to prepare foods. 

• Checks and ensures appropriate temperature of equipment and food using thermostats and thermometers, including monitoring refrigerator/freezer systems, such as fans, drains, and doors, for proper operation, and reports issues or problems to facility management. 

• Reports maintenance issues immediately to appropriate personnel.

• Maintains up-to-date knowledge of company Food Safety Programs within assigned area of responsibility, as well as all local, state, and federal regulations. 

Sanitation and Maintenance 

• Washes and disinfects kitchen area including tables, tools, knives, and equipment to ensure sanitary conditions and meet the departmental standards, including using sanitizers required by health department. 

• Sets up and breaks down work station with required tools, equipment and supplies.

• Ensures items meet established specs, ensures adequate fill of containers, stores items appropriately, and cleans station as appropriate. 

• Follows and ensures compliance with sanitation and cleaning procedures and pest control guidelines.

• Reports pest control issues to appropriate personnel. 

• Disassembles and assembles kitchen equipment following safety procedures. 

Kitchen Tools & Equipment 

• Uses kitchen tools safely and appropriately, including using appropriate tools to open cartons, boxes, and cans.

• Keeps knives sharpened; using proper knife handling procedures; uses correct knives for food item or specific task.

• Uses dry pads when moving hot material.

• Engages all appropriate safety devices prior to operating equipment. 

• Uses measuring tools (for example, scale, measuring cups, measuring spoons) to precisely measure ingredients and portion sizes. 

Food Preparation 

• Prepares and cooks food according to recipes, quality standards, presentation standards, and food preparation checklist, establishing priority items. 

• Prepares ingredients for cooking, including portioning, chopping, and storing food before use. 

• Washes and peels (if required) fresh fruits and vegetables to prepare them for cooking or consumption.

• Tests foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils. 

• Weighs, measures, and mixes ingredients according to recipes or personal judgment, using various kitchen utensils and equipment. 

• Monitors food quality while preparing food and throughout the day utilizing the HACCP forms and production charts. 

• Prepares cold foods, including salads, cold sandwiches, condiments, and dressings. 

• Ensures proper portion, arrangement, and food garnishments are used according to standards.
