Department: Kitchen

Reports to: Kitchen Supervisor / Sous Chef

Job Summary:

The primary function of a Cook is to prepare high quality food for guests based on established guidelines and their level of expertise, i.e. cook level.

Overall responsibilities:

The Cook is responsible for supervising the production of all food required by the hotel/outlet. The Cook coordinates and secures the up-keep of all safety and sanitation standards of the hotel and ensures the proper use of all use records and recipe cards.


Qualification Standards:

- Experience in high volume cooking preferred

- Different cook certificates

- Basic English, Spanish knowledge

- Exerting up to 20 kg of force occasionally and/or up to 9 kg of force frequently or constantly to lift, carry, pull, push or otherwise move objects

- Poseer el "Carnet de Manipulador de Alimentos".

- Or Título de un centro de enseñanza en Hostelería/Restaurante.

Tools & Equipment:

Items include but are not limited to: Electric slicers, buffalo chopper, electric saw, mixers, meat grinders, all gas and electric cooking equipment, steam kettles, pressure cookers, kitchen cutlery, deep fat fryer, convection ovens, scales, can opener, knife sharpener, cheese and vegetable shredder, toaster, blenders, as well as all restaurant/kitchen specific machines and equipment.

Functions & duties:

  • Approach every guest and associate in a friendly, service oriented manner
  • Maintain regular attendance in compliance with the Marriott standards, as required by scheduling will vary according to the needs of the hotel
  • Maintain high standards of personal appearance and grooming, which include wearing the proper uniform and nametag when working
  • Comply at all times with the Marriott standards and regulations to encourage safe and efficient hotel operations
  • Learn proper technical skills and procedures as listed on the technical skills and safety grid.
  • Act on safety hazards immediately before being asked to by your supervisor.
  • Conform to all Hotel policies as outlined in your employee handbook and orientation checklist.
  • Contribute ideas frequently, if not daily, on ways to improve your area. This is the primary ingredient to the quality improvement process in your area.
  • Perform any reasonable tasks assigned by supervisor or manager.
  • Perform all tasks on the "Technical Skills Training and Safety Grid.(Fremap)
  • Follow estimates received from the supervisor / manager on production charts as closely as possible.
  • Fill in production charts correctly on a daily basis.
  • Pull all food needed for daily production from the walk‑in box and utilize all leftovers as per SOP and with the help of the supervisor / manager.
  • Prepare all hot food for breakfast and lunch, dinner; take care of service kitchen needs and lunch in the canteen in accordance with Marriott procedures.
  • Maintain FIFO system including labelling at all times
  • Make sure all food prepared is on time for the canteen
  • Cook orders as per shift from server. Handle any special request go guests in a positive manner
  • Begin advance prep for the next day and for the PM shift
  • Maintain food quality and service in accordance with standardized company recipes and procedures.
  • Practice proper break‑down and storage of all leftovers. All refrigerated food must be properly identified, covered, dated, and chilled as soon as possible. Breakdown all leftover food to clean pans and notify the Food Production Manger about the amounts of specific items which are left
  • Comply with the "clean as you go " policy and daily sanitation projects and checklist. Make sure that all stations are properly cleaned at the end of the shift
  • Maintain good housekeeping practices in all walk‑in boxes, walk‑in‑ freezer, and dry goods storeroom.
  • Return all food items not used on next shift to designated storage areas, being sure to cover / date all perishables
  • During peak business periods, coordinate and expedite to accelerate service
  • Comply with the 30 checkpoint list according Marriott standard.

In addition to these functions, he/ she is expected to:

- Provide warm and friendly service at all times

- Practice safety standards at all times

- Understand the Guest Response procedures and report all complaints to AYS

- Attend department meetings

- Inform your manager if issues exist that you can't solve

- Adhere to the time set for meal breaks

- Be able to work all shifts, weekends and holidays

- Adhere to all Hotel policies and internal procedures

- Present a professional appearance at all times and comply with all grooming and uniform


- Attend and participate at 15 Minutes pre-Shift Meetings every day

- Develop and maintain positive communication skills with peers, managers and all other

departments in the hotel

- Be flexible to assist other departments when needed with authorization from your manager

- Carry out all reasonable requests by management which he/she is capable of performing

- Other duties as required


This hotel operates 7-days a week, 24 hours a day. All associates must realize this fact and be aware that at times it may be necessary to move you from your accustomed shift and/or rotate you over different departments and properties as business demands. In addition, this is a hospitality service driven business: therefore a friendly, hospitable personality must be projected at all times.
